1 salmon filet, cut in half, skin removed
1 cup walnuts
1 packed cup basil, parsley and dill mix
2 tablespoons melted butter
1 teaspoon salt
1 teaspoon black pepper
Several sheets of Filo dough at room temperature melted butter
for spreading on Filo

Place walnuts and herbs in the food processor, add
salt, pepper and 2 tablespoons of melted butter and
process until consistency of wet gravel, about 4
seconds. |

Wet your hands and pat the
herb-walnut mix onto half of the salmon filet, cover
with the second half of the filet - stretch to fit.
Slice the filet into 1" wide portions. |

Preheat the oven to 425°F.
Using a kitchen brush, paint 2 Filo sheets with melted
butter, wrinkle the sheets and overlap to have a 3-layer
place in the center. Place one slice of the salmon
"sandwich" in the center of the wrinkled sheets, gather
and bring the dough sheets to the top, wrapping the
salmon in a packet. Preheat the oven to 425°F. |

Place all packets on a buttered
cookie sheet. Bake 30 minutes, cut one in half to see if
the fish is cooked through. Ideally it should have a
slightly undercooked center, this way it will be ideal
when served, since it continues cooking from its own
heat even after it is taken off the cookie sheet. Bake 5
minutes longer if the fish is raw and check again. |

Serve with greens and black bean
salad.
